Blueberry Muffins

One thing I was most looking forward to after blueberry picking, was making blueberry muffins.  I had a hunch that Secora would actually eat them.  While she's made a lot of progress on her sensory issues, we still spend A LOT of time trying to get reasonable amounts of food in her.  Blueberry muffins seemed like something that might go over well. 

Monday morning, when Sierra was at summer camp and Secora was down for a nap, Sedona and I made the muffins:

Blueberry Muffins
makes about 18

3c flour + 1tbsp flour
1tbsp baking powder
½tsp baking soda
½tsp salt
10 tbsp butter, softened
1c sugar
2 eggs
1½ c yogurt (plain or vanilla, usually, but flavored ones mix in well too)
1½ c blueberries (fresh or frozen)

1. Preheat oven to 375 degrees.
2. Put butter and sugar into mixing bowl:

3. Cream butter and sugar until fluffy
4. Add eggs one at a time:

5. Mix 3c flour, baking powder, baking soda and salt in separate bowl
6. Mix in half of dry ingredients, then one-third of yogurt.  Continue alternating dry ingredients and yogurt until they are all added:
7. Toss blueberries with 1tbsp flour
8. Fold in blueberries:
9. Fill muffin tins that have been lightly greased.  The recipe makes 18 muffins in my large stoneware pan. 
10. Bake about 25-30 minutes. 
11.  Feed to a 18 month old with sensory issues and gloat over your success (we'll try to ignore the part where she decided they were poison later in the day when I tried to get her to eat one at the OT)
