Bacon Peanut Butter Oatmeal Chocolate Chip Cookies

I've briefly mentioned a few times that Secora has trouble with eating.  She has some sensory processing problems and has made a lot of progress since she started seeing the occupational therapist several months ago, but she's still far from eating a regular diet.  One of her "safe" foods lately has been homemade oatmeal cookies, so the OT suggested I try adding things to the cookies.  This was the result:

Bacon Peanut Butter Oatmeal Chocolate Chip Cookies
Makes 4 dozen

4 strips bacon
1c butter, softened
¾ c sugar
¾ c brown sugar
½ c peanut butter
2 eggs
1tsp vanilla
2 c flour
1tsp baking soda
1tsp salt
2tsp cinnamon
3c old-fashioned oats
¾ c chocolate chips

1. Cook bacon until crispy and crumble or chop into small pieces
2. Pre-heat oven to 350°F
3. Cream bacon, butter and sugars until light and fluffy
4. Add eggs one at a time, then vanilla
5. In small bowl, mix flour, baking soda, salt and cinnamon.  Add to wet mixture and stir until combined
6. Mix in oats and then chocolate chips
7. Roll dough into 1-1 ½ inch balls and bake 12-14 minutes until lightly browned.  Let cool on flat surface (I use a silpat and just slide that onto the table without taking the cookies off) for softer cookies, or a cooling rack for crispier cookies
