Classic Brownies

Brownies should not come from a box. They're so easy to make!

8Tbsp (one stick) butter
6Tbsp (3/8c) cocoa powder
2Tbsp (1/8c) vegetable oil
1c sugar
1tsp vanilla
2 eggs
2/3c flour
1/2tsp baking powder
1/4tsp salt

Put the butter in a microwave safe bowl (and wipe the coffee stain off your counter before taking any pictures for your blog, dang it!)
Microwave until melted. Add cocoa powder and oil

Mix until the cocoa powder isn't lumpy

Add sugar
Stir until combined
Add eggs and vanilla (ideally your chocolate/butter mixture is a bit cooled off by now)

Stir until combined
Mix flour, baking powder and salt in a separate bowl, then add to the chocolate.

You mix the dry ingredients separately so you don't get a lump of baking powder somewhere. I avoid dirtying dishes whenever possible (and can't wait to have a dishwasher again), so I just put the flour in first, then the baking powder and salt on top and stir it into the flour a bit before I really mix everything

Fold the flour in just until it's combined, don't overdo it.

Spread into an 8x8 pan. For easy brownie removal and clean-up, line the pan with foil and spray it with non-stick cooking spray

Bake at 350 for about 20-25 minutes. If you put a toothpick in about halfway between the edge and the center, it should come out with fudgy crumbs, but not batter. While you wait for the brownies to bake, you can plop yourself down in front of a good movie with the bowl and eat any leftover batter. Wait, no! Raw batter (and eggs) bad! Bad, I say! Now pass the spoon...because I usually make brownies solely because I'm craving the raw batter.

The brownies are pretty tasty too, though
